Olivieri Chocolate Workshop Description

This workshop is experimental at its core. We will begin our time together by roasting and hand shelling organic cacao beans. Eileen will share her relationship to cacao as experienced through her own Italian lineage. Emphasis in this workshop will be placed on the process versus the product. That being said, each participant will make their own chocolate creation to pair with Tumbleroot spirits/beers.

Olivieri Chocolate

“I make tiny batch chocolate fresh to order.

I roast, hand shell, and grind the whole beans

and craft each recipe from organic cacao. No two recipes

are exactly the same. I support small farms that are practicing

sustainable agriculture and enhancing biodiversity. I use local ingredients

to reflect the geography of where I’m working.”

-Eileen Olivieri, artist
